HACCP Level 2

The Food Safety & Hygiene HACCP Level 2 course takes into account all the requirements of Food Safety legislation and standards based on the Guide to Food Safety Training published by the Food Safety Authority of Ireland (FSAI). There is a legal requirement Regulation (EC) 852/2004 that all food handlers undertake food safety training commensurate to their duties.

Food Safety & HACCP training aligned to the Food Safety Authority of Ireland Level 2 Guidelines is the mandatory training standard for all food handlers within 6 months of starting employment in Ireland. This training meets the training requirements of (EC) 852/2004 on the hygiene of foodstuffs.

 

On completion of this course, participants will be able to:

  • Demonstrate the food safety skills gained at Level 1
  • Outline the requirements necessary for Bacterial Growth.
  • Understand how to use time/temperature controls to prevent and control Bacterial Growth
  • Describe food borne illnesses and the factors that contribute to same
  • Where applicable be able to ensure food safety during storage and preparation of food
  • Understand how to apply correct and appropriate cleaning procedures
  • Understand how to take reasonable measures to prevent cross contamination by food allergens
  • Understand how to deal with recalled products
  • Deal with a Food Safety Complaint effectively
  • Cooperate with Food Safety Auditors
  • Understand how to take samples for laboratory analysis

No previous experience is required. This course covers all aspects of level 1 and level 2 food safety training requirements.
